Freekeh (national) or farik is a food product made from green wheat grains. The cobs are harvested while still green and tender before being dried and roasted. They are then ground into hard, ground grains similar to dried wheat grains, and are larger than bulgur. Cooking recipes for freekeh vary from region to region.
